Spicy Cod Bites

Ingredients

  • 1 package Shore Lunch® Cornmeal Breading Mix
  • 4 cups vegetable oil
  • 1 pound cod fillets, cut into 1 inch cubes
  • 2 teaspoons cayenne pepper, divided
  • 2 teaspoons garlic powder, divided
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon The Original “Louisiana” Brand Hot Sauce™
  • 1 large egg, beaten
  • 1 tablespoon water
  • For the Sauce
  • ½ cup ketchup
  • 1 teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon chili powder
  • ¼ teaspoon black pepper
  • ½ teaspoon Worcestershire sauce
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon The Original “Louisiana” Brand Hot Sauce™
  • 2 tablespoons prepared horseradish

Directions

  • Heat the oil in a large stockpot to 350 degrees.
  • Add the cod to a medium sized mixing bowl. Add the lemon juice, 1 teaspoon cayenne pepper, and 1 teaspoon of garlic powder and toss to coat.
  • Combine the breading, remaining cayenne pepper, and remaining garlic powder in a shallow dish.
  • Whisk the egg and the water in a shallow dish.
  • Dip each piece of the cod in the egg then dredge in the breading. Place the breaded cod on a baking sheet until ready to fry.
  • Carefully add the cod, in batches, to the oil and fry for 2-3 minutes.
  • Using a slotted metal spoon remove the cod from the oil to a platter lined with paper towels.
  • Whisk the ketchup, garlic powder, cayenne pepper, chili powder, black pepper, Worcestershire sauce, lemon juice, Hot Sauce, and horseradish in a small mixing bowl. Serve immediately with the fried cod.
